Résumé

These proceedings contain 70 papers presented at this IIR meeting, held in Boston, USA. Topics were on: chilling and freezing of seafoods; processing, cold storage and transport; chilling and freezing onboard vessels; quality of storage in seafood; new products, packaging and analytical criteria; quality and utilization of seafood; research roundtable; panel on environmental and human safety considerations of ammonia and chlorofluorocarbons. This volume also includes 5 papers presented during the opening and plenary sessions.
