Résumé

Cured, sliced, pasteurized pork ham was placed in polyamide-polyethylene bag and inoculated with Listeria monocytogenes (LM). After inoculation all of the samples were sealed under vacuum and irradiated with Cobalt 60 gamma rays at a dose of 0, 0.5, 1, 1.5 and 2 kilograys. After irradiation the number of surviving LM per gram of meat was calculated. D(10) value for LM irradiated in pork ham was 182 grays. In the second part of the experiment both irradiated and control samples were stored at 10 and 20 deg C within 21 days. Number of LM and TPC were determined at the beginning of the experiment (day "O") and after 3, 7, 14 and 21 days of storage. Results of measurements and simulations are given and compared.
