Résumé

The nature and number of indicator and pathogenic microbes in fish reared using recirculating and nonrecirculating water systems were compared. For each system, 20 samples of different fish species were randomly selected and gutted, and microbial analyses were performed. Results are given for different species and for Listeria monocytogenes, Escherichia coli, Yersinia enterocolitica, Salmonella and Clostridium botulinum.
