Résumé

The keeping quality of pasteurized milk under refrigerated conditions (4 plus or minus 1°C) for 0-12 days was investigated. Sensorial analysis showed that staleness and off-odour tended to occur towards day 8 and that the milk tended to curdle around day 10. The authors recommend that milk stored at 4 plus or minus 1°C should be consumed within 8 days.
