Résumé

The exponential growth of the dairy industry in India in the last two decades has been one of the outstanding successes built on an ambitious vision called Operation Flood, which commenced 50 years ago. This growth has come just in time to meet the demands of a large consuming class based in urban centres, having high disposable incomes and continually desiring high hygiene and world class quality products. This has also catapulted the Indian dairy industry to the status of the world’s largest. The co-operative movement has spread across the country and benefited millions of dairy farmers. This movement has also resulted in spreading awareness about how to handle milk and preserve its quality right from the stage of milking to its delivery to the customers. The extensive training programmes conducted by the dairy industry, numerous research Institutes and other organisations have benefited dairy farmers by educating them on the technical, quality and hygiene issues of milk handling. Thus, one of the oldest means of livelihood has been transformed into a dynamic industry through systematic effort backed by the government and ably absorbed by milk farmers.
