Résumé

The paper presents the technique of modified atmosphere packaging. It describes the modified atmosphere alternatives so far, gases used in these atmospheres and their role, packaging types, and materials, as well as the types of packaging machines used in this technique. The paper also presents some of the advantages of modified atmosphere packaging for fresh fruit and vegetable preservation.
