Résumé

This article presents the Spanish translation of the Bulletin of the IIR reference 1999-1746. Modified atmosphere packaging of whole fresh salmon in a new palleting system has been examined as a packaging and distribution method for long distance distribution. Salmon were superchilled to exact temperature, designed to substitute water-ice, and packaged in special gas flow designed 20 kg cardboard boxes. The boxes were piled, wrapped in large plastic bags and subsequently flushed with carbon dioxide. The superchilled fish stored enough refrigeration capacity to compensate for crushed ice normally used in EPS boxes. The quality and safety of the salmon is ensured through the whole chill chain by measurable and strict processing hygiene, by retarding microbial growth with modified atmosphere and by preventing microbial growth by keeping the temperature below 0 °C. The system has both economic and ecological benefits.
