LA CONGELATION DU PRODUIT OCCASIONNE UNE AUGMENTATION DU TAUX DE SUCROSE DANS LES TRANCHES DE PAPAYE CONGELEES MAIS LE RAPPORT FRUCTOSE/GLUCOSE (0,8) RESTE CONSTANT DURANT L'ENTREPOSAGE POUR LES PAPAYES FRAICHES ET CONGELEES. ON A DETERMINE PAR CLHP LES ACIDES ORGANIQUES APPARAISSANT NATURELLEMENT DANS LES PAPAYES. L'ACIDITE TOTALE DECROISSAIT PENDANT LA CONGELATION ET LES CONCENTRATIONS D'ACIDES CITRIQUE, ASCORBIQUE, L-MALIQUE ET SUCCINIQUE AU COURS DE L'ENTREPOSAGE A L'ETAT CONGELE.
