THIRTY-TWO BROILER CARCASSES WERE PURCHASED FROM A RETAIL SOURCE AND WERE THEN PLACED AT 277 K (4 C) FOR SHORT TERM STORAGE UNDER HOUSEHOLD STORAGE CONDITIONS. CARCASSES WERE EVALUATED FOR BACTERIAL GROWTH INITIALLY AND AFTER ONE, FIVE, AND EIGHT DAYS OF STORAGE. MEASUREMENTS INCLUDED ENUMERATION OF PSYCHROTROPHIC AND MESOPHILIC BACTERIA, COLIFORM, AND FUNGAL CONCENTRATIONS ON THE BREAST SURFACE OF THE BROILER CARCASSES. RESULTS FROM THIS EXPERIMENT INDICATE THAT THERE WAS LITTLE BENEFIT DERIVED FROM OPENING THE RETAIL PACKAGE PRIOR TO STORAGE. REMOVING THE CARCASSES FROM THE RETAIL PACKAGE AND REPACKING THEM IN NEW PACKAGES RESULTED IN A SMALL INCREASE IN BACTERIAL NUMBERS.
