Summary

A BACTERIOLOGICAL EXAMINATION WAS CARRIED OUT ON 200 AIRCHILLED BROILER CARCASSES IN ORDER TO ESTABLISH THE EFFECT OF THE INITIAL CONTAMINATION ON THE SHELF LIFE OF THE PRODUCT. THE AVERAGE MESOPHILIC AND PSYCHROTROPHIC LOG COUNTS AS WELL AS THE PSEUDOMONAS LOG COUNTS REACHED 8 PER GRAM NECK SKIN WHICH IS GENERALLY CONSIDERED AS THRESHOLD VALUE FOR BACTERIOLOGICAL SPOILAGE. WHEN SPOILAGE OCCURRED THE PSEUDOMONAS COUNT REPRESENTED 95% TO MORE THAN 99% OF THE TOTAL AEROBIC COUNT. THE PSEUDOMONAS BACTERIA WERE THE LIMITING FACTOR FOR THE SHELF LIFE OF POULTRY CARCASSES.
