Summary

In the first part of this article, the characteristics and the monitoring results of a standard salami drying plant were described. In this second part, the author gives a mathematical model for the heat and mass transfer of meat in bags. This model makes it possible to foresee the configuration and performance of a drying plant, as well as to optimise its characteristics. The theoretical basis of heat and mass transfer in natural and forced convection is explained. The author then describes his simulation model and its results, regarding: 1) air velocity and thermodynamic conditions of heat transfer; 2) estimate of heat transfer coefficient and mass losses; 3) energy consumption and possibilities of energy saving. He proposes a new type of dehumidifying plant, of which main characteristics are: uniform air velocity, temperature and humidity in the room; use of perforated floor and ceiling with periodic inversion of air flow; air dehumidifying with absorbents. Finally, the author describes the configuration of this new plant and particularly the characteristics of the relevant dehumidifier.
