FROM A SIMPLIFIED MODEL OF WATER TRANSPORT FROM FOODSTUFFS TO COLD SURFACES, THE AUTHORS HAVE RELATED TRANSFER PARAMETERS TO THE PRINCIPAL CHARACTERISTICS OF A SPECIFIC FOODSTUFF. THE MAIN CONCLUSION OF THEIR EQUATION SHOW THAT WEIGHT LOSSES OF FOODS ARE NOT ALWAYS RELATED TO RELATIVE AIR HUMIDITY OR TEMPERATURE GAP BETWEEN AIR AND THE REFRIGERATING SURFACE.
