Summary

This study compares the new microbiological standard on prepared foods "Norms of hygiene for the elaboration, distribution and trade of prepared foods" (RD 3.483/2000, BOE, 12-1-01) to that which has been in use until now, "Technical and sanitary regulation on collective dining rooms" (RD 2817/1983. BOE, 11-11-1983). The paper examines what this change involves for the evaluation of foods with no culinary treatment. The work is based on the microbiological analysis of 311 samples of vegetable salads and the evaluation of the results according to both regulations. The paper investigates the changes introduced in the new standard.
