Summary

Antioxidants are believed to protect against the oxidation of alpha-farnesene to conjugated trienes in apple (Malus domestica, Borkh) peel, thus providing resistance against superficial scald development. The authors conducted three experiments in which apples were 1) harvested weekly, during which they were exposed to increasing hours at less than 10 deg C during ripening; 2) induced to ripen with no hours at less than 10 deg C by applying ethephon; and 3) enclosed in paper bags as they ripened. Results are given.
