Summary

Active and intelligent packaging (AP, IP) received a great deal of attention in the USA, Australia and Japan. However, this type of packaging faced with barriers in Europe, i.e. legislative restrictions, lack of knowledge about their effectiveness and acceptability, fear of consumer resistance, and economical and environmental impact of the concepts. AP was developed as a response to globalization of markets and trends in consumer preferences toward mildly preserved, fresh, tasty, and convenient food products with a prolonged shelf life. The AP actively changes environment conditions inside the package. Such systems support the opportunity to extend shelf-life and storage time of food products while maintaining their nutritional quality, inhibiting the growth of pathogenic and spoilage microorganisms and eliminating the need for additives. IP systems by monitoring the conditions of packed food or the environment surrounding the food provide information about food quality during transportation and storage. The potentially broaden application of active and intelligent technologies in preservation of low temperature food products will be presented.
