Summary

Fresh-cut produce is performing very well in the food industry. It has sustained a remarkable food safety record, and one that the industry must maintain. The industry now has access to processing and packaging technologies that will continue to support its growth. The trend of improving temperature control troughout the cold chain must continue if significant improvements in quality are to be obtained. The art of achieving a properly designed refrigeration system for fresh-cut products is well known. The challenge is to aggressively integrate this art into fresh-cut produce modified atmosphere packaging programs.
