Spoilage and safety of fresh-cut vegetables packaged under equilibrium modified atmosphere.

Summary

The effect of equilibrium modified atmosphere packaging on the safety and spoilage of fresh-cut vegetables was investigated. Vegetables were packed in an intermediate permeable packaging film and compared to storage in air. The vegetables were stored at temperatures between 2 and 10 °C. In addition, the vegetables were inoculated with psychotropic pathogens associated with vegetables. Respiration rates were studied in relation to temperature and film permeability. Sensitivity to pathogens was also studied, in relation to temperature. An optimal storage temperature of 4 °C was suggested.
