Summary
In large kitchens, air handling comprises two different functions: collection-extraction-filtration of the polluted air (fat, smoke, vapours), and the introduction-filtration-diffusion of fresh air into the premises. The aspects of the conditions to be achieved to provide comfort for the staff working in the kitchens, including the design of filtration ceilings and the energy bill are examined. The need for a good knowledge of the kitchen equipment in order to obtain satisfactory results is emphasized, together with the possibilities for energy recovery. Y.G.
