Air curtain design in a vertical open display cabinet.

Summary

Open display cabinets are known to be the weakest link in the cold chain, from the point of view of food temperature control. Particular care is paid to their design, mostly to ensure better efficiency of the air curtains. In the paper, the use of computational fluid dynamics is illustrated, as a tool for the prediction of the air curtain flow pattern. A vertical open display cabinet for frozen food is taken into consideration, and optimization of the air curtains at the design stage is illustrated.
