Summary
Air transport is intended to reduce the risks of deterioration of fresh produce such as asparagus. It is sometimes necessary to protect such produce from high temperatures. The authors compare a mathematical model for quality evolution with field measurements. The aim is to extend the storage life of asparagus that has reached its destination.
