Summary
This is the third part of the papers dealing with the basic principles of refrigeration food technology. The various applications of refrigeration engineering in food technology are presented: cooling, process treated as a part of food processing, including cryogenic cooling, refrigeration food technology in meat, poultry and dairy industries, in beer and wine technologies, as well as in many others technologies including minimal food processing ones.
