Summary
Research on conditions of non-anaerobic growth of Bifidobacterium breve ATCC 15700 and of B. longum ATCC 15707. These cultures require additional nitrogen compounds with low molecular masses and a heat treatment of milk for the formation of SH groups. Cultures with a final pH of 4.8 to 4.7 had the best acidification activity and can be stored for 3 days at 4 deg C, with no major reduction in this activity.
