THERE IS ABOUT A 6-HOUR LAPSE BETWEEN MILKING AND COOLING. MIXING MILK RENDERS IT IMPOSSIBLE TO PREDICT THE BIOLOGICAL CHANGES THAT MAY OCCUR DURING TRANSPORT ; THE ONLY SOLUTION IS ON-SITE COOLING BY LIQUID NITROGEN.
