Summary

Aluminium is one of the most widely used materials both for food containers and packaging. Today, at a national level, there is not any specific regulation, therefore only the generic provisions from DL108 and DPR 777 apply. To supply useful technical elements for the elaboration of a specific regulation, the Istituto Superiore di Sanitá performed a number of experimental studies. Such studies were done both on foodstuffs (raw or cooked) stored in aluminium containers, and on food simulates; time and temperature conditions were chosen to simulate those which are normally expected during real life.
