Summary

A new technique was developed for peeling water chestnuts. Preliminary cooling of water chestnut in liquid nitrogen increases the shell brittleness and makes the process of cracking easier without damaging the kernel. Optimal cooling time in liquid nitrogen has been obtained. It was found that the cracking force depended on the after-cooling treatment time under normal atmospheric treatment before cracking.
