Summary

The Charentais cantaloupe is the most widely produced melon in France. Its orange-fleshed fruit is highly prized for its strong aromatic flavour. Nevertheless, Charentais melons have poor storage capabilities and a short shelf life, essentially due to a more marked climacteric phase. In order to improve storage and handling properties, researchers have generated, using traditional breeding methods, hybrids of Charentais cantaloupe with shelf lives that are extended to variable extents: medium- and long-shelf-life melons. If the shelf life has been greatly extended, the consumer often complains about the poor aromatic flavour of the long-shelf-life melon compared with the others. Since 1999, determination of the composition of the aroma of Charentais melon has been undertaken at Ctifl. A summary of five years of research is presented in this article.
