Survival of Listeria Monocytogenes in cold storage of Zabady, Karish and Domiati cheese.

Summary

Zabady, Karish and Domiaty soft cheese were manufactured from milk inoculated with Listeria monocytogenes and kept at 4 deg C. Samples of the above refrigerated dairy products were examined using McBride Listeria Agar for the viability of Listeria monocytogenes, till the complete inhibition of that organism is achieved. It was noticed that Listeria monocytogenes can survive in Zabady, Karish and Domiaty cheese for 17,30 and more than 62 days respectively. It was noticed that the pH plays an important role in survival.
