Summary
Results of tests carried out under industrial conditions of meat freezing are given. The aim was to determine a rational control procedure for the process in refrigerated, high humidity, air. Devices used for humidification are described. The relation between weight loss and the duration of refrigeration with humidified air for 2 hours was established as well as the variation of temperature on the surface and interior of the meat.
