Summary

Verotoxin (shigatoxin) forming E. coli are a major cause of infectious diseases transmitted via food. E coli O157:H7 and related verotoxin producing pathogens are rather persistant in a variety of foodstuffs. Therefore prevailing manufacturing processes and storage conditions are often sufficient only to inhibit growth of E. coli, but mostly not suited to totally eliminate pathogens in foodstuffs. However, their limited heat resistance permits the destruction of the pathogens with sufficient reliability by heating or pasteurization.
