Summary

THE EFFECT OF STORAGE AS FLAKES OR GRANULES OF FROZEN ORANGE JUICE HAS BEEN STUDIED. TWO CHARACTRERISTICS WERE EXAMINED: FLAVOUR AND EASE OF HANDLING. FOR THE LATTER CHARACTERISTIC, THE BEHAVIOUR OF THE GRANULES DIFFERED FROM THAT OF THE FLAKES. MELTED FLAKES STUCK TOGETHER WHILE MELTED GRANULES REMAINED SEPARATE. BUT THERE WAS NO DIFFERENCE BETWEEN THE FLAVOURS OF FLAKES AND GRANULES.
