Summary

VALENCIA CONCENTRATES (60 DEG BRIX) WERE STORED AT 273, 265 AND 255K (0, -8 AND -18 DEG C) TO DETERMINE ADEQUATE CONDITIONS FOR BULK STORAGE. ANALYTICAL PARAMETERS PRACTICALLY DID NOT CHANGE DURING 6 MONTHS OF STORAGE AT THE EXPERIMENTED TEMPERATURES. A SIGNIFICANT LOSS OF FLAVOUR QUALITY WAS OBSERVED AT 273K AND NOT AT 265 AND 255K. CONSEQUENTLY, BULK STORAGE AT 265 K IS CONSIDERED THE MOST ADEQUATE.
