Behaviour of Japanese quince (Chaenomeles japonica) stored under refrigerated conditions.

Summary

The paper deals with the postharvest behaviour of Chaenomeles fruits stored under refrigerated conditions (5 plus or minus 1 °C, 95% relative humidity) for 9 weeks. At various time intervals a sample was taken and fractionated into juice, pulp and seeds. The characteristics and composition of the fruits and their fractions were established. Results indicated that Chaenomeles preserved its characteristics of fresh fruit well during the first month of storage. Changes in the content of constituents of interest (vitamin C, organic acids, sugars, volatile compounds, fatty acids) are reported.
