Summary
A mathematical model is presented; it makes it possible to calculate the process duration for the conditions of asymmetric heat exchange in each zone of a three-zone nitrogen quick-freezing tunnel. Classification is proposed combining nine classes of objects used in quick freezing, for which thermophysical characteristics used in the calculation of the duration of the process are calculated.
