Summary

Prestorage heat treatment at 38 deg C for 4 days delayed softening of apples during storage at 0 deg C. This treatment partially inhibits deterioration of the uronic acids of cell walls. In treated fruit, galactose and arabinose content diminish during storage. In non-treated fruit, only galactose content diminishes.
