Summary

Fruits ripened after air storage were not juicy and developed mealiness compared with controlled-atmosphere stored fruits. Water soluble pectin increased during ripening, both after harvest or storage; fruits stored in air at 0 deg C showed the smallest increase. Cell wall material was extracted and pectic fractions were separated and analysed for uronic acid and neutral sugars.
