Summary

Prestorage heat treatment (38 deg C for 4 days) retarded the softening of apple cv. Anna fruits during cold storage (0 deg C). Fruit softening of unheated apples during storage was accompanied by changes in pectic substances. Suggestions are made to explain this action.
