Summary
Starch content increases with fruit ripening. Early harvesting and modified-atmosphere storage have a significant effect upon acidity and apple firmness. Modified atmopshere storage reduces ester, alcohol and hydrocarbon synthesis. Late harvesting increases volatile compound contents by 14%. Harvesting with a 6.5-8.5 starch index produces fruit with optimal properties.
