AFTER AN IMPORTANT BIBLIOGRAPHICAL STUDY OF THE ORGANOLEPTIC, PHYSICAL, CHEMICAL AND HISTOLOGICAL CHANGES OF SARDINES FROZEN OR HOT-STERILISED, THE A. DETAILS THE RESULTS OF A TEST STUDY OF MUSCLES OF SARDINES, FRESH, CHILLED, FROZEN, CHILLED AND FROZEN, STERILISED AT 115C (STORED IN MELTING ICE PRIOR TO STERILISATION; FRESH, FROZEN AND STERILISED; CHILLED, FROZEN AND STERILISED). THIS STUDY SHOWS THAT PHYSICAL AND CHEMICAL CHANGES ARE ASSOCIATED WITH CONSTANT MORPHOLOGICAL CHANGES IN MUSCLE FIBRES OR STROMA, CHARACTERISING THE TREATMENT APPLIED.
