PUMPKIN CONTAINS NEARLY 15 MILLIGRAMMES OF CAROTENOIDS PER 100 G OF FRESH PULP, DISTRIBUTED AS FOLLOWS: LUTEIN (NEARLY 50%), ANTHERAXANTHINE, VIOLAXANTHINE, BETA-CAROTENE, ZEAXANTHINE AND OTHER XANTHINES. BLANCHING AND FREEZE-DRYING DO NOT INDUCE LOSSES IN CAROTENOIDS, AS DOES COLD STORAGE. LUTEIN AND BETA-CAROTENES ARE PARTICULARLY SENSITIVE TO DEEP-FREEZING AND STORAGE. (Bibliogr. int.
