THE SHELF LIFE OF FRESH FISH OR FISH FILLETS IS ABOUT 1 WEEK IN ICE AT 273-275 K (0 TO 2 DEG C). IN ORDER TO MAKE THIS FRESH FISH AVAILABLE IN LARGER AMOUNTS TO CONSUMERS, A NEW MODIFIED ATMOSPHERE PACKAGING WAS DEVELOPED. PACKAGING IS DONE WITH A MACHINE FORMING, FILLING AND SEALING. JUST PRIOR TO SEALING THE PACKAGES WERE EVACUATED AND RINSED WITH A CO2 -OXYGEN-NITROGEN MIXTURE. THE TESTS SHOWED THAT A SHELF LIFE OF 7 DAYS AT 275-277 K (2-4 DEG C) WAS OBTAINED. CO2 INHIBITED THE GROWTH OF A NUMBER OF MICROORGANISMS. THIS PACKAGING SYSTEM APPEARED SUITABLE FOR COD, SAITHE, HADDOCK, PLAICE, SOLE, TROUT, SALMON AND HERRING.
