Summary

STORAGE AT 277 K (4 DEG C) OF TROUT FILLETS PACKAGED IN 100 % CO2 WAS STUDIED AS AN ALTERNATIVE TO CONVENTIONAL VACUUM PACKAGING. THE ADDITIONAL EFFECT OF DIPPING THE FILLETS BEFORE PACKAGING INTO AN AQUEOUS SOLUTION OF GLUCONO-DELTA-LACTONE AND LACTIC ACID WAS ALSO EXAMINED. THE MODIFIED ATMOSPHERE PROLONGED THE STORAGE LIFE OF THE FILLETS TO 14 DAYS, AND THE ACIDIFYING DIP PROLONGED IT TO 24 DAYS, WITH NO SUBSTANTIAL CHANGE IN THE SENSORY CHARACTERISTICS. TO ASCERTAIN WHETHER THE TREATMENTS DESCRIBED MIGHT INVOLVE BOTULISM RISKS, FILLETS WERE INOCULATED WITH VARIOUS C. BOTULINUM STRAINS AND PACKAGED UNDER VACUUM AFTER ACIDIFICATION OR UNDER CO2 WITH OR WITHOUT PREVIOUS ACIDIFICATION. IN NONE OF THE SAMPLES WAS GROWTH OR TOXIGENIS OBSERVED.
