Summary

BATCHES OF TABLE GRAPES FROM 6 VARIETIES (MUSCAT ITALIA, DATTIER DE BEYROUTH, KING'S RUBY, VALENCY, SULTANINE AND MUSCAT D'ALEXANDRIE) WERE STORED AT 1 DEG C, RH 90%, AND TREATED CONTINUOUSLY WITH SULPHUR DIOXIDE GENERATOR BAGS FOR 3 MONTHS. THE ORGANOLEPTIC PROPERTIES WERE PRESERVED DURING THE 3 MONTHS. JUICE ANALYSIS FROM THE VARIOUS VARIETIES SHOWED THAT DURING STORAGE, THE LEVELS OF TARTARIC ACID AND VITAMIN C WERE DECREASING CONSIDERABLY COMPARED WITH THE LEVEL OF TOTAL SUGARS WHICH WAS DECREASING VERY SLIGHTLY.
