Summary

Controlled atmosphere cold storage of pears of the Conférence variety may result in the occurrence of cavities. Delaying atmosphere alteration for 10 days after cooling will reduce significantly the risk of damage. Keeping oxygen at a concentration 3% higher than that of CO2 will further reduce the risk. Tastiness is not significantly diminished under these conditions. The most important factor of successful storage is just-in-time harvest.
