Cold storage of grated beetroots under modified atmosphere.

Summary

The influence of temperature and atmosphere composition on the quality of grated beetroots (Beta vulgaris L) were evaluated. Grated beetroots were packed with films with different gas permeability in plastic trays and stored at 0 and 4 deg C during seven days. After the storage period the market life was evaluated at 20 deg C. Results indicated that after seven days at 0 deg C, grated beetroots stored under modified atmosphere showed better quality than those stored in air.
