Reaction of grated carrots to modified atmospheres.

Réponse de la carotte râpée aux atmosphères modifiées.

Summary

Grated carrots were packaged in medium-density polyethylene bags and stored at 0, 5 and 10 deg C for 14 days. During storage the authors studied the kinetics of gases (O2, CO2, and C2H5OH) inside packages, along with mass loss, exudation and changes in physicochemical and organoleptic properties. Temperatures from 0 to 5 deg C and high-O2-permeability polyethylene films maintained the quality of grated carrots. A temperature of 10 deg C led to anaerobic conditions, the accumulation of fermentation products and the occurrence of bad odours.
