Summary

Regarding the suitability for controlled-atmosphere storage and modified-atmosphere packaging large differences between products are found. For many products optimum O2 and CO2 concentrations are given, but these values are not always valid. The mechanisms behind the influence of O2 and CO2 and the reasons for the differences between products are still quite uncertain. A systematic approach is proposed for further research on the influence of O2 and CO2 on the most important process: respiration. The different steps of this approach are described. By combining data like optimum concentrations, respiration and diffusion rates with descriptions of the underlying physical and physiological processes, the most suitable package can be calculated.
