Condition of adaptation for live sales.

Summary

To supply markets with aquaculture products, it is necessary to know and understand several factors: the market requirement for the various species, their size, shape, maturity, colour and other characteristics; the physiological and biochemical limits of the species; how they can be produced with the right characteristics and prepared for transport; how to maintain viability under optimum conditions throughout the transport chain. Live kuruma shrimp (Penaeus japonicus) can be raised to meet market requirements then harvested, chilled and transported packed in sawdust in cardboard boxes considerable distances from Australia to Japan, where they arrive vigorously alive. Live fish are generally transported immersed in minimal amounts of water which is filtered and oxygenated. The development of a new food grade anaesthetic opens up the possibility of stress-free harvest, providing a product better able to withstand the rigours of transport.
