SIX GROUPS OF SALMON WERE FED FOR 3 MONTHS WITH DIETS CONTAINING CANTHAXANTHIN AND ASTHAXANTHIN. THE FISH WERE RAISED IN SEA CAGES OFF STEWART ISLAND, NEW ZEALAND. THE COLOUR OF THE FILLETS WAS EVALUATED ON A SPECTROCOLORIMETER, USING THE VALUES CIE (1976), L, A, B, C.
