Summary

NO SIGNIFICANT DIFFERENCES WERE FOUND IN PROTEIN-N CONTENT IN THE DORSAL MUSCLE BETWEEN FARMED AND WILD RED SEA BREAM AND YELLOWTAIL ; THE FARMED FISH HAD, HOWEVER, HIGHER LIPID CONTENTS. NO DIFFERENCE IN LIPID CONTENT WAS FOUND BETWEEN FARMEDAND WILD FLOUNDER. A REMARKABLE DIFFERENCE WAS FOUND IN THE COLOUR OF THE DORSAL MUSCLE BETWEEN WILD AND FARMED FISH, WHATEVER THE SPECIES. THE SKIN OF THE RED SEA BREAM WAS MORE REDDISH WHEN WILD THAN WHEN FARMED. A PANEL WAS ABLE TO DISTINGUISH BETWEEN THE TEXTURE OF WILD FISH AND FARMED FISH.
