Summary

The behaviour of consumers with respect to ready-to-eat foods was investigated. The study focused on pregnant women and seniors in particular. The foods investigated included smoked seafood, cooked crustaceans, bagged salads, cut fresh produces, soft cheeses, delicatessen meats and salads. Less-educated persons were more likely to comply with storage guidelines for deli meats and soft cheeses. Roughly 80% of pregnant women and 70% of seniors stored soft cheeses for longer than the recommended periods, and this is a major concern. 2060 respondents were surveyed.
